The perfect chocolate chip cookie
I’m always searching for new chocolate chip cookie recipes. Even though I have fond memories of getting sick on Tollhouse cookie dough when I was a little baker, I still covet the perfect chocolate chip cookie.
Last month my friend Cathy sent me a link to an article in the New York Times that featured cookies from the chocolate magician Jacques Torres. I quickly tested them and and happy to say that I may have found the perfect chocolate chip cookie. Merci, Jacques.

My notes and adjustments:
- Use fleur de sel on top of the cookies and kosher salt in the dough.
- Use a scale and measure each cookie as 1-1/2 ounces. Roll them and dip them in the fleur de sel.
- Bake 15-17 minutes.
